Avocado and chicken salad
2 chicken breasts
Lettuce, tomato and onion, as needed
3 green apples
1. Pound the chicken breasts to make them thinner.
2. Grill the chicken breasts with salt, pepper and a drizzle of olive oil. When they’re ready, cut them into strips and set aside.
3. Meanwhile, mix lettuce (or rocket and watercress, if you prefer), with tomato, onion, avocado and the finely sliced apples.
4. Add the chicken (already cold) and season with olive oil, balsamic vinegar, sea salt and a few drops of lemon juice.
